Lull Before the Storm
The annual storm that hits Naggiar about this time every year is almost upon us. This year, it is expected to start Friday. Right now, we are in the eerie, quiet lull that happens just before all heck is about to break loose…
Alright, by now, you know I love me a good (and occasionally, bad) metaphor. And the storm/harvest metaphor is a good, if slightly pedantic, one. I guess the problem lies in the timing. While we are blessed with a beautiful, positive product at the end of our storm, unfortunately, the great state of Texas is experiencing a storm of a magnitude not seen in over 40 years, if ever. The results of that storm will be many years and billions of dollars of clean up and repair of buildings, structures, and lives. Thankfully, they don’t experience a storm like that every year like in my unfortunately-timed storm metaphor!
Alright- where was I? As yes, the lull before harvest.
A thing of beauty is a joy forever…especially when it is squeezed, fermented, and bottled!
Right now, we are in the quiet spot between the last bottling of the year and the first grapes coming in. The press and de-stemmer have been pulled out and readied for action, the 2015 and 2016 vintages have been moved into barrel room #2, and almost all of the new barrels have arrived. We are, however, doing a few last minute preparations before the metaphorical storm of 2017 hits.
Derek and crew have been going through the vineyards collecting samples to check the sugars and tasting the fruit to check to see how the phenolics/flavors are developing. Right now, much of the fruit is still at the tooth enamel-peeling stage of ripening. We have our annual weather-er, harvest intern (Katie Herron) running field numbers on each block twice a week for clients who purchase fruit from Naggiar. In essence, this is all just a little forecasting for the coming storm.
So it begins again. Grape sampling. Smash, chill, allow to sit for an hour or two and then measure pH, brix and most importantly…..taste the juice.
We are pretty much ready on our end…so go ahead and bring it 2017!
